Peach Scones

I just turned to my favorite segment of Lancaster Farming, which we still get down here, and discovered a recipe for Peach Scones. Doesn't that sound like the perfect food to serve with a cup of tea at a neighborhood book club?

Ingredients:
3 cups plus 3 Tablespoons flour
3/4 cup sugar
5 teasp. baking powder
1/2 teasp. baking soda
1 stick butter, cut into small pieces
1/2 tsp. vanilla
1 egg
1/2 cup buttermilk
1 1/2 cups peaches, chopped small

Glaze:
1/3 cup sugar
2 Tablespoons milk

Preheat oven to 375 degrees.
Mix scone ingred. in order listed.
Add buttermilk to make mixture adhere
into scone shapes.
(Can add more but mixture should
not be too wet.)
Shape into 10-12 scones
and place on greased cookie sheet.

Mix glaze. Brush glaze mixture onto
scones with a pastry brush
or drizzle on with a spoon.

Bake scones for 22 minutes,
or until light brown on the bottom.
Serve after cooling.

(I make buttermilk by adding lemon juice
or vinegar to milk. I'd add a Tablespoon
or two to this amount of milk and allow
it to sit for a few minutes.)

The recipe doesn't say to do it this way,
but I would mix together the dry ingredients
by hand, cut in the butter until
the pieces are smaller,
then mix in an already beaten egg
and vanilla,
and then add as much buttermilk as needed.
Do not over mix.
It will toughen your end results.

There is no contributor's name at the end of the recipe
so I give the credit to Lancaster Farming.
