Quiche for a Crowd

Sometimes, the Hertzler men make breakfast for the men at church
and sometimes, they make breakfast for the women. I think Michael
usually heads up this endeavor.

This makes one very large foil pan full of quiche and takes about an hour to bake.
These are the same size pans we use for the pig roast.

Spray the pan.
Add 1 1/2 large bag of shredded hash browns to bottom of pan
and bake at 425 for about 20 min. until some of the moisture is gone
and the potatoes are starting to brown.
You can lower the temp. to 350 unless you're in a rush.

Layer on 4-8 cups of shredded cheese.
Then add a layer of meat. (5-8 cups)
(ham, bacon, sausage, mushrooms, peppers, onions, etc.)

Beat together 2 1/2 dozen eggs (beaten)
10 cups milk/half and half
5 tsp. salt
1 tsp. pepper

Add 1/2 cup flour in a small amount of the milk to keep eggs from separating later.
(optional)

Pour egg mixture over potatoes, cheese, and meat and bake until firm and golden brown.

It is easier to bake these ahead of time and warm them up if you are serving a crowd.
