Saute`~
2 T. butter
2 T. chopped onion
Mix together~
3 T. flour
2 tsp. sugar
1 tsp. salt
1/8 tsp. pepper
dash of garlic salt, basil, oregano, thyme
Add to butter and onions, whisking until smooth and bubbly.
Remove from heat. Gradually stir in:
2 cups of tomato juice
Bring to a boil, stirring constantly.
Boil 1 min.
In another kettle, heat 2 cups milk on low, before you even start the onions. ;)
If you forget to do this, it's okay to add the milk cold.
Add the warm milk to the hot tomato mixture.
Heat until almost boiling and serve.
I usually double the recipe.
Delicious with toasted cheese sandwiches on a cold, windy, rainy, or snowy day.
